This cookie is highly nutritious, loaded with protein and packed with flavor, yet it has the ability to work its way to becoming a family favorite! They serve well as power snack, but beware; you don’t want to eat them just before bed as they produce quite the energy boost! Healthy Oatmeal Cookies 1 ½ C almond butter 3/4 C raw, unfiltered honey 3 eggs 4 ½ C 100% rolled oats 2 ½ tsp baking soda 1 C Coconut Oil 1 Tbls + 2 tsp *Stevia 1 tsp. vanilla ½ C ground flax seed I C chopped pecans I C chopped walnuts Cream together almond butter, oil, honey and *Stevia. Add eggs, baking soda and vanilla, beat. Add oatmeal, flax, pecans and walnuts, blend. Drop by the spoonful onto an ungreased cookie sheet and bake at 325º for 10 to 12 minutes. Cool and enjoy! At times you may wish to add chocolate chips for that one or two within the family that just can’t do without them! Note: Coconut oil, raw honey and Stevia can be found in the natural food department of your grocer. Coconut oil is a highly beneficial oil. When used in this recipe, the cookie is at its best nutritionally and texture-wise because the oil comes in a somewhat solid form. *Stevia is a natural, highly beneficial sweetener.
