Silken Chocolate Pudding
1 block Extra Firm Silken Tofu 3-4 Tbsp. cocoa to desired strength ¼ cup pure maple syrup 1 tsp. vanilla Favorite fresh or frozen berries 1 packet *Stevia Natural Sweetener Mix tofu in blender for 10-15 minutes, or better yet, in a food processor for 3-5 minutes, scraping down sides with spatula as needed. Add the cocoa and pure maple syrup, blending for an additional 2 minutes. Finally, add the vanilla and blend. Pour into serving containers. Refrigerate for at least 2 hours prior to serving. Top with a bit of fruit coulee, if desired. To make fruit coulee, simply place a handful of your favorite fresh or frozen berries into blender and add one packet of Stevia, blending until smooth. To eliminate seeds, pour through a mesh strainer over the pudding and enjoy! *Stevia is a natural, highly beneficial sweetener!
