Healthy cooking
can be quick and easy. Make this delicious summertime meal without
turning on the stove. The freezer aisle in your supermarket holds
the key to simple no-cook shrimp tacos. Thaw the shrimp by placing
them in the refrigerator the day before you need them, or thaw them
under cool, running water.
Shrimp Avocado Tacos
½ medium cucumber -- peel, remove seeds, and dice (about 1 c) ½ c low-fat sour cream 1 clove garlic, minced Pinch coarse salt 8 corn taco shells 1 pound frozen cooked shrimp, thawed 1 small bunch watercress, rinsed, spun dry and coarsely chopped 1 avocado, peeled, pitted, and diced 1 c prepared salsa Stir together cucumber, sour cream, garlic and salt in small bowl. Arrange taco shells in napkin-lined basket. Place shrimp, watercress, avocado, and salsa in separate decorative bowls. Set all ingredients on the table and let each person build their own taco.
