Create and enjoy this salad made from fresh, whole vegetables – and so easy to make! Perfect Tomato Salad 4 tomatoes, thinly sliced 1 cucumber, peeled, thinly sliced ¼ cup sliced black olives ¼ cup sweet onion, finely chopped 1 cup celery, thinly sliced 2 Tbls fresh mint, chopped (or to taste) ¼ cup chopped parsley 2 garlic cloves, minced 2 Tbls extra virgin olive oil 2 Tbls balsamic vinegar Sea salt and freshly ground pepper to taste Place tomatoes and cucumbers in a large bowl. Add the olives, onions, celery, mint, and parsley; toss to combine. Combine the garlic, olive oil, vinegar, salt, and pepper in a small bowl and whisk well.
